Turkey noodle casserole is a great potluck dish, where the meat and vegetables are baked with egg noodles and mozzarella cheese.

Ingredients
Ground turkey: 2 pounds
Oil: 2 tbsp
Chopped celery: 1 cup
Sliced capsicum or green pepper: 1
Sliced red pepper: 1
Sliced mushrooms: 1½ cup
Chopped onion: 1
Chopped garlic: 2 tbsp
Chopped ginger: 1 tbsp
Chopped tomatoes: 2
Parsley: 2 tbsp
Basil leaves: 4-5
Oregano: 2 tsp
Chilli powder: 1 tsp
Sugar: 1 tsp
Salt to taste
Tomato sauce: 2 cups
Water: 3 cups
Egg noodles: 2 cups
Shredded mozzarella cheese: 1 cup
Method
Heat oil and fry the turkey with some salt and sugar, onions, ginger and garlic, stirring frequently so that the meat breaks down and cooks evenly.
When the meat starts to get brown, add celery, peppers and mushrooms and mix it well with the meat.
After 5 minutes, add the tomatoes, parsley, basil, oregano, chilli powder and check the seasoning. Saute for 2 minutes, add tomato sauce and water, close the lid and let it simmer for 15 minutes.
Pre-heat oven at 375 degrees F. In a well-greased pan, arrange the egg noodles. Pour the turkey mixture all over it evenly. Sprinkle cheese so that top is covered.
Bake for 35-40 minutes and let it cool for another 15 minutes before serving.
