Tomatoes with Feta cheese

I recently bought some feta cheese for salads and was wondering what else I could use it for and read in about.com that it goes well with tomatoes. There are many versions and you can add more ingredients like basil leaves or balsamic vinegar. But the basic recipe consists of sliced tomatoes and feta cheese. Feta cheese has a hard crumbly texture, something like paneer but more dense. It also has salt so you do not have to add any. If you don’t have feta cheese, you can use grated paneer but don’t forget to sprinkle some salt over it. I have used a microwave for this recipe but you can also place the tomato slices on a skillet on medium heat for 5 minutes or till the cheese softens a little.

Ingredients:
Tomatoes: 2
Feta cheese: 2×2 inch piece
Olive oil: 1 tsp
Oregano: 1 tbsp
Method:
1) Cut the tomatoes into round slices and arrange them on a plate which you use in a microwave.
2) Crumble the feta cheese or thinly slice it and place it over the tomatoes.
3) Drizzle olive oil and sprinkle oregano over it.
4) Microwave on high for 3-4 minutes, till the cheese becomes soft. It won’t melt but will become chewy and softer.
5) Serve immediately.
