Fluffy Buttermilk Pancakes

Pancakes are one of my favourite things to eat at breakfast. I have tried different pancake recipes and while all of them turn out to be okay, I was never completely satisfied with them. Some tend to look perfect but taste a little dry, while others can be too moist in the centre. My mom used to make a type of pancake called “Poddo Ruti” which basically consisted of flour, milk and sugar with no eggs. Those were supposed to be flat, but otherwise I prefer my pancakes to be soft and fluffy. This is one of the easiest and fluffiest pancakes I have made and I use this as my basic pancake recipe. To this batter, you can keep adding different things like fruits, nuts, chocolate chips etc. I used blueberries in some of them and served the pancakes with fruits as I do not like maple syrup.

Prep time: 10 min Cooking time:  15-20 min Serves: 8 medium sized pancakes

Ingredients:
Flour: 1 1/4th cup
Salt: A pinch
Sugar: 4 tbsp
Baking powder: 1 tbsp
Baking soda: A pinch
Cooking oil/Melted butter: 4 tbsp
Egg: 1 large
Buttermilk: 1 1/4th cup
(If you do not have butter milk or baking soda, use regular milk and add 1 1/2 tbsp white vinegar to the batter)

Method:
1) Mix the flour, salt, sugar, baking powder and baking soda and to it add the egg. Whisk it well and then add the butermilk.
2) Keep whisking and add the oil and make a somewhat smooth batter. It’s ok if there are some lumps because overmixing will let the air escape.
3) Spray a non-stick skillet with some cooking spray or butter and pour 3 tbsp batter to make a medium sized pancake on medium heat. I added some blueberries here, which is optional.

When the sides start to bubble, flip it and the let the other side cook for a minute or two.
4) Serve with fresh fruits, maple syrup or warm honey.
