Roti Pizza

This is a fun and easy dish to make with left over rotis. Sometimes you just don’t feel like having rotis the usual way. You can make some changes by either turning them into rolls or also frying the rolls in a cornflour batter to make them crispy. Another option is to make a ‘pizza’ out of them. I used a readymade flatbread which is something like a roti and makes it look and taste like a thin crust pizza with an awesome crunchy base. Put whatever veggie or meat you have at home and create your own topping. I even put some cabbage leaves! Do try it as it requires less effort and tastes delicious; it can also be packed for lunch or eaten as a quick snack!
Prep time: 5 min Grilling time: 10 min Serves: 1
Ingredients:
Flatbread/roti: 1 large
Tomato sauce/ Ragu sauce: 2 tbsp
Chopped onions: 2 tbsp
Mini turkey pepperoni (or any other meat you have at the moment): 2 tbsp
Chopped capsicum/green pepper: 2 tbsp
Chopped carrots: 2 tbsp
Baby corn: 2 tbsp
Grated cheeze: ½ cup (I used a combo of mozzarella, cheddar, parmesan but your regular Amul cheese will also do)
Butter: 1 tbsp
Olive oil: 1 tsp
Oregano flakes: ½ tsp
Parsley flakes: ½ tsp
Basil garlic powder (optional): ½ tsp
Salt to taste
Method:
1) Apply ragu or tomato sauce all over the base.
2) Sprinkle chopped vegetables and meat.
3) Drizzle butter and olive oil and add the seasoning.

4) Sprinkle a generous amount of cheese and grill in the oven for at least 10 min at 350 degrees F or till the cheese melts.

 5) While serving you can either eat it as it is (like I am eating right now as I type this yum yum), fold it in half like a taco or make slices like a regular pizza.
Sorry, I don’t have more pics, I was so hungry that I did not even plate it and had it straightway from the oven!
