Prawn fry curry
On May 14, 2012 by Meghalee DasPrawns are one of my favourite things to eat; I like the tiny red shrimps which Mom makes with mustard oil called Baati chorchori to malai prawn or jumbo ones. There are so many ways one can prepare it: fry, grill, bake and so on. I will be posting my Prawn Malai Curry recipe soon. Until then, here is an easy way of stir frying prawn using Indian spices; it’s easy, fast and delicious!
Prep time: 30 min Cooking time: 25 min Serves: 4
Ingredients:
Medium-sized prawns: 500 gms
Diced potatoes: 1 large
Sliced onions: 1 cup
Chopped ginger: 1 inch piece
Chopped garlic: 3 pods
Slit chillies: 2
Chopped tomato: 1 medium
Turmeric powder: 1 tsp
Chilli powder: 1 tsp
Cumin powder: 1 tsp
Coriander powder: 1 tsp
Garam Masala: 1 tsp
Cumin seeds: 1 tsp
Corn flour: 1 tbsp
Lemon juice: 4 tbsp
Pepper: 1/2 tsp
Mustard oil: 4 tbsp
Chopped coriander leaves: 1 sprig

Method:
1) Clean, devein and peel prawns. I like to keep the skin as it adds a crunchy taste and traps the flavours but you can just retain the fleshy part if you want.
2) Sprinkle some salt, pepper, 2 tbsp lemon juice, 1 tsp oil and corn flour on the prawn and let it marinate in the fridge for 15 min.
3) Saute the potatoes with some salt and turmeric for 5 minutes. Add theĀ prawns and fry them with the potatoes for another 5 minutes till they start turning golden and the potatoes are almost cooked. Take them out and put in a plate with tissue paper on it so that the excess oil gets soaked.
4) In the same pan, add one more tbsp of oil and when it’s hot, add the cumin seeds. When they start to splutter, add chopped onions and chillies.
5) Fry the onions till they start turning transparent and add the ginger and garlic. Fry for 2 more minutes.
6) Sprinkle the turmeric, chilli, cumin and coriander powder and mix well for 2 minutes. Add the chopped tomatoes and saute them till they become mushy and the oil start leaving the sides of the pan. Add salt, garam masala and remaining lemon juice and stir the masala for 1 minute.

7) When the masala is cooked, add the sauted potatoes and prawns and let them soak the flavours from the masala. Stir fry for 2 minutes, cover for 3 minutes on medium heat. Check if the potatoes are soft on the inside and crispy on the outside and remove from heat.
8) Garnish with chopped coriander leaves and serve with steamed rice.
