Red Chilli Garlic Chutney for Momos

It is essentially made of dried or fresh red chillies, garlic and certain other ingredients which can be added according to one’s preferences. Momo is not momo unless you have tears streaming down your face while eating them with this hot chutney! That’s the best part of any freshly prepared condiment or dipping sauce – they can elevate a simple snack into something divine! Keep this sauce ready and store it in the fridge for a few days.
Ingredients:
Dried or fresh red chillies: 20-25
Red chilli flakes: 1 tbsp
Chopped green chillies: 1
Chopped garlic: 2 large cloves
Ginger paste: ½ tsp
Tomato: 1, medium
Lemon juice: 2 tbsp
Olive oil: 1 tsp
Salt and pepper to taste
A few sprigs of coriander
Method:
1) If you have fresh red chillies, skip this step. If you are using dried ones, soak the red chillies in hot water for a few hours till they become soft.
I didn’t have much time, so I placed them in a bowl of warm water in a microwave to soften the chillies quickly. Drain and keep them aside.
2) Now blend them with the rest of the ingredients into a semi-smooth paste. You can increase or decrease the number of chillies depending on how spicy you like it. Also, keep in mind what kind of chillies you are using — I prefer Kashmiri Mirch as it has a milder flavor and you get a large amount of chutney too. However, if you use Bhoot Jolokia, only one will be more than enough, but you won’t get a lot of pulp from this one spicy chilli.
4. Check the seasoning and serve the red chilli garlic chutney with momos or dumplings. We were so hungry that we just smeared it all over our hot momos and devoured them! You can also serve this spicy chutney with idlis, chaats etc.
