Eggless chocolate cup cakes
On October 7, 2011 by Meghalee DasCup cakes are really easy to make and it took me only about half an hour. So if you crave for something sweet in the middle of the night and can’t sleep coz you are too excited about something like your bday (ok, I am talking about myself), then just make happy cupcakes! I made a really small batch to celebrate my birthday, like 7 cakes, and since I would have to halve all the ingredients I did not want to use eggs, coz what will I do with half an egg in the middle of the night! Anyway I am posting the recipe for 12 cakes at least, but they get over fast. So it is better if you make at least two batches, especially if you have kids or a husband with a sweet tooth!
Prep time: 15 min Baking time: 15 min Servings: 10-12
Ingredients:
All-purpose flour: 1 ½ cups
Sugar: ¾ cup
Salt: 1 tsp
Baking powder: 1 tsp
Cocoa powder: ¼ cup
Choco chips (optional): ½ – 1cup
Vanilla extract: 1 tsp
Vegetable oil: 1 tbsp
Water: 1 cup
Method:
1) Preheat oven to 350 degrees F while making the cake batter.
2) First mix the dry ingredients and then the wet ingredients together till the paste becomes smooth.
3) Pour batter into a greased cup cake tray or use cup cake liners and bake for 15 minutes.
4) Cool on a wire rack for at least 45 minutes if you want to do a bit of icing or frosting. You can put whipped cream or chocolate sauce on top.

If you have time, make a basic sugar frosting using icing/confectioner’s sugar and butter or melt chocolate chips and cream in a pan and use as a ganache. You can also make a small hole with an icing tip and pour the chocolate sauce into the cakes to get a moist gooey core.
