Apple Crisp

Apple Crisp or Apple Crumble (as known in the UK) is a delicious dessert consisting of baked apples topped with a crisp oatmeal, flour and brown sugar crust. Tomorrow is Valentine’s Day and on this day I usually make desserts that have chocolate in them. But this time I wanted to do something different and simple [I have a cold and don’t feel like spending a lot of time in the kitchen 🙁 ] There is something comforting about apple crisp and you need to follow only a couple of steps to prepare this dessert. It also gives you more time to just relax or dress up for a romantic Valentine’s Day dinner!

I have used a ceramic pie dish but one may bake it in individual ramekins for a more special touch. If you want to make this a vegan dish, all you need to do is substitute butter with vegan margarine or a brand like Earth Balance and follow the rest of the steps. Granny Smith apples go best with this recipe but feel free to use any other “crunchy” variety. You can also substitute apples with peaches, blueberries and pears.

Ingredients:
Base:
Sliced apples: 4 cups
Lemon juice: 1 tbsp
White sugar: ½ cup
Flour: ½ tbsp
Cinnamon: ½ tsp
Nutmeg: ¼ tsp
Water: ¼ cup

Topping:
Melted butter: ¼ cup or ½ stick
Quick oats: ½ cup
Brown sugar: ½ cup
Flour: ½ cup
Baking powder: 1/8 tsp
Baking soda: 1/8 tsp

Method:

1) Preheat oven to 350 degrees F. Peel and cut apples into thin slices and sprinkle lemon juice over them to prevent yellowing.

2) Arrange the apple slices on a pie dish or any baking dish. Mix the rest of the base ingredients — white sugar, flour, ground cinnamon and nutmeg and sprinkle all over the slices evenly. Gently pour water all over to slightly soak the slices.

3) In a bowl, melt butter and add to it the oats, brown sugar, flour, baking powder and baking soda.

Mix them to create a crumbly texture and sprinkle this over the apple slices to create an even topping.

4) Bake for 50 minutes till the crust becomes brownish in color and you can see the apple juice bubbling at the sides.

6) Let it cool for 15 minutes and serve with fresh fruits, whipped cream, custard or ice cream. The warm apple crisp goes very well with the cold ice cream. But since this dessert is already quite sweet, I prefer to serve it with sliced berries to get a slightly tart taste.
