Paneer Uttapam

Uttapam is very similar to a dosa, as the same batter is used. But unlike dosas, which are like crisp and thin crepes, uttapams are thicker like pancakes. Moreover, we put the filling inside the dosa but in uttapam we have toppings instead of fillings. This makes the uttapam look almost like a pan pizza. There are many popular toppings for uttapam, the most common being onions, tomato and paneer. For Onion Uttapam, all you need to do is place some chopped caramilized onions over it and for Tomato Uttapam, place some chopped tomatoes and seasoning on the pancake. You can also sprinkle some cheese or grated coconut and serve it with sambar and chutney. It is great for breakfast and you can try different toppings or even use leftover vegetables if you want.

I already explained the paneer preparation in my previous post on Paneer Dosa here http://meghs-kitchen.blogspot.com/2013/04/paneer-dosa.html. Use the same filling as a topping on the pancake.

Method:

1) Heat a tsp of oil and pour the uttapam batter in a non-stick pan. Flatten it into a round shape with the back of a bowl or big spoon but don’t make it too thin.

2) Sprinkle the paneer tomato topping over it so that it sticks to the batter. Let it cook on medium heat till the insides cook properly.

3) After about 5 minutes or so, flip the uttapam. The bottom part will be golden by now. Let it cook for 2-3 minutes so that the paneer topping gets cooked further and gets a beautiful reddish color.

4) Sprinkle some grated coconut and serve with sambar.
