Turkey and Noodle Casserole

This is a great recipe for potluck or parties because it is a satisfying meal in itself and you don’t need to spend a lot of time on it. I used turkey but you can use any other minced meat of your choice. My mother used to make a similar dish with both mutton and chicken, something similar to a Shepherd’s Pie. In fact, I should try making that soon! If you don’t have egg noodles, you can also use regular noodles, just parboil them for a few minutes before you put them in the baking dish.
Note: Since I made this for a party, it is a BIG portion, enough for 15 guests; you can use half or 1/4th the ingredients if you are cooking for fewer people.

Ingredients:
Ground turkey: 2 pounds
Oil: 2 tbsp
Chopped celery: 1 cup
Sliced capsicum or green pepper: 1
Sliced red pepper: 1
Sliced mushrooms: 1 1/2 cup
Chopped onion: 1
Chopped garlic: 2 tbsp
Chopped ginger: 1 tbsp
Chopped tomatoes: 2
Parsley: 2 tbsp
Basil leaves: 4-5
Oregano: 2 tsp
Chilli powder: 1 tsp
Sugar: 1 tsp
Salt to taste
Tomato sauce: 2 cups
Water: 3 cups
Egg noodles: 2 cups
Shredded mozzarella cheese: 1 cup

Method:
1. Heat oil and fry the turkey with some salt and sugar, onions, ginger and garlic, stirring frequently so that the meat breaks down and cooks evenly.
2. When the meat starts to get brown, add the celery, peppers and mushrooms and mix it well with the meat.
3. After 5 minutes, add the tomatoes, parsley, basil, oregano, chilli powder and check the seasoning.
4. Saute for 2 minutes, add tomato sauce and water, close the lid and let it simmer for 15 minutes.

5. Pre-heat oven at 375 degrees F. In a well-greased pan, arrange the egg noodles.

6. Pour the turkey mixture all over it evenly. It should not be very thick; the water in the gravy will help to soften the noodles.

7. Sprinkle cheese so that top is covered. Bake for 35-40 minutes.

8. Let it cool for another 15 minutes before serving.
